		<description><![CDATA[I used those striped chiogga beets, so maybe that is why the muffins are not pink, though I think even with red beets you should not expect a very intense color.  I made another batch of these muffins this week with applesauce and raisins instead of peaches and walnuts.  They&#039;re delicious both ways! If you make them, let us know how it goes.  :)]]></description>
