		<description><![CDATA[This was amazingly good. I subsituted fingerling eggplant for the potatoes b/c that was what I had on hand.  So good! I can&#039;t wait to get at my leftovers tonight!  The slaw was a perfect addition- I would have liked it without the slaw- but it added an amazing finish to the whole thing.
