watermelon bowl

Summer’s coming! Well for those of us living in the non-temperate Northern Hemisphere it is anyway. And with summer comes the bountiful fresh fruit and frequent summer barbecues. Usually when I go to a barbeque I’ll like to bring some sort of dish with substance, to show off the homemade veggie burgers and quiches, but sometimes, you just gotta be lazy. Let someone else do that work for you.

When that happens my go-to dish is often a fruit salad. Because they’re delicious and healthy and there’s almost nothing better than fresh fruit! And it’s really something you can’t have too much of.

If I’m bringing a fruit salad, I still have my pride to look after, and can’t bring just your average fruit salad. There are, however, limited ways that you can dress up a fruit salad! Sure you can add some exciting tropical fruit, but it’s still a bunch of fruit mixed in a tupperware. So about 10 years ago, while I was in high school, I came up with the idea of making a bowl out of a watermelon. While I’m sure countless people had come up with the idea before, it was novel to me, being before the time where I started looking up absolutely everything up on the internet.

It’s extremely easy to make a watermelon bowl and sure does a lot to make fruit salad more exciting. I’ve included some easy step-by-step picture instructions. Feel free to experiment and change up the cut or design of the bowl and make it your own! (more…)

Creamy Peanut Soba Salad
I’m not sure that I’ve ever encountered a peanut I haven’t loved.  I think one day I will eat peanut butter puffin cereal for breakfast, peanut butter and jelly for lunch, honey roasted peanuts for a snack, peanut pad thai for dinner, and peanut butter cookies for dessert.  Then I will go to sleep one happy girl, provided I don’t turn into a peanut à la Violet Beauregard.

In this peanut-loving heart of mine, creamy peanut butter holds a special place.  I have been known to eat by the spoonful straight from the jar (don’t tell!).  So when the inspiration struck to combine peanut butter with a couple bunches of the greens that are overflowing in my fridge I couldn’t resist.

This dish is layered to create harmonious flavor contrasts.  Nutty buckwheat soba noodles, enrobed in the peanut sauce, form the base.  Creamy peanut butter is enhanced with a touch of coconut sweetness, lime tang, and basil zest.  Hearty panfried greens and tempeh top the noodles, and a handful of nuts provide the crunchy garnish. I see a lot of quinoa-tropical-fruit-cilantro recipes floating around, and I love to eat all of them. But this week when I wanted a light quinoa meal, I didn’t have any cilantro. Instead all I had was this beautiful bunch of parsley. Cilantro and parsley are very different flavors, but I didn’t see why I couldn’t make a delicious quinoa salad with parsley. And now, post deliciousness, I am able to provide you with another great recipe for summer eating that is healthy, simple, tasty, and colorful! I love the juxtaposition of sweet mango with tangy (some might think spicy) chili powder, and the parsley just brings a bright freshness to the dish.
